Sesame Crusted Fillets
4 6 oz. fillets of fish (this is good with thinner fillets)
1 large egg, beaten
1/4 cup sesame seeds
1/4 cup black goma (black sesame seeds)
1-2 tablespoons olive oil
salt and pepper, to taste
Heat a heavy, large skillet and sprinkle with a little olive oil.
Season each fillet with a little salt and pepper, then dip into the beaten
egg and into the combined sesame seeds (cover both sides with egg and
seeds - the egg holds the seeds on). Saute for 2-3 minutes on each side,
depending on the thickness of the fillet.
