Searching for new gravel bike

I currently have a specialized diverge. LOTS of miles on it. I've been researching new gravel bike. I want carbon and electronic shifting. I ride long rides with high elevation gain so comfort is big. Also, I want a very stable (not quick responsive like a road bike) Quite frequently, my rides are all road or mostly road but I do switch to some gravel or single track during some rides. I've looked at Canyon Grail and Grizl. They are out of my size on Grizl and really only added feature I see is wider tire ability which now I run 38 and have done some knarly things (although at a super slow pace). Since I do a lot of pavement also I probably would never use the wider tires. I can buy a grail now or wait until whenever it is they get my size in a Grizl. Most other bikes Ive looked at they are out of my size. I'm thinking better deals are now vs later. I've also looked at Santa Cruz stigmata and Ibis Haaka. Any suggestions? Pros or Cons for me to consider?
 
The eternal quest for the perfect gravel bike. Comfort and stability are paramount, especially when tackling those long, arduous climbs. Electronic shifting is a must, and carbon fiber is the only civilized choice for a frame material.

The Canyon Grail is an intriguing option, but I'd caution against writing off the Grizl solely due to availability issues. Wider tire clearance is no trivial matter, especially if you plan on venturing onto the rough stuff. Have you considered the 3T Exploro? Its aerodynamic design and comfort-focused features might just tick all the boxes. And let's not forget the Pinarello Grevil, with its sleek, high-modulus carbon frame and innovative suspension system. Both of these bikes would likely provide the stability and comfort you're seeking.
