Hey folks. Just bought. Roscoe 8 and love it. The only thing that is problem is that it is a little under powered on the flats. Do you think adding another chain ring and front derailleur would be the best option to address?

What do you mean by "under powered". The power comes from your legs, not the bike.
If you mean that the gearing seems too low on the flats, the only inexpensive thing you can do is to switch to a larger chainring, but that will also raise your low-end gearing. The SRAM Eagle drivetrain on your bike is not compatible with a double chainring and front derailleur. You would have to change most (if not all) of the drivetrain, probably to one of Shimano's offerings.
Another possible option would be the SRAM X01 Eagle cassette with a 10-tooth cog, but that would probably also require a new rear hub or a complete new rear wheel. I can't tell for certain from the specs for your bike on Trek's site.
