Rolled Top Sirloin Roast

  1. I managed to get my hands on a huge top sirloin (about 3 lbs) and i have an
    idea for it.
    I was thinking of pounding it out to about 1/4" thick and rolling it up with
    some sort of stuffing (I'm thinging of a Tex-Mex kinda thing). Gonna tie it
    and sear it, then into the oven for a while. I'm looking for a recipe for
    th stuffing, recommendations on roasting time and temp,

    Doesn't sound like something I'd do with top sirloin; however, if you
    want Tex-Mex, I'd go with some Spanish rice, a non-liquid type fresh
    salsa mixture (tomatoes, onion, peppers, ripe olives, etc.) and some
    (not a lot) shredded Monterey Jack or other similar cheese. When you
    put it in the oven, you might put some beef broth in the bottom of the
    pan....

  3. INGREDIENTS:
    1 lime, juiced
    1 tablespoon minced garlic
    1 teaspoon dried oregano
    1 teaspoon ground cumin
    2 tablespoons finely chopped canned chipotle peppers in adobo sauce
    adobo sauce from canned chipotle peppers to taste
    beef sirloin pounded flat
    salt and pepper to taste

    DIRECTIONS:
    In a small bowl, mix the lime juice, garlic, oregano, and cumin. Stir in
    chipotle peppers, and season to taste with adobo sauce.
    Place on the meat, sprinkle with salt and pepper, roll up and tie with
    string (if oven baking) or with metal skewers or nails (for charcoling).
    Place in a glass dish. Pour lime and chipotle sauce over meat, and turn to
    coat. Cover, and marinate in the refrigerator for 1 to 2 hours.

    Oven Cooking
    Heat oven to 350, cook in oven for 45mins, till center of the meat reaches
    155degs, remove let stand for 5 mins.
    Fot The Gril:

    Preheat grill for high heat.

    Lightly brush grill grate with oil. Place steak on the grill, and discard
    marinade. Grill steak for 6 minutes per side, or to desired doneness.
