  1. We made this at Food Not Bombs last week with a mountain of fresh
    turnips, and it was delicious. You can vary the veggies, and use any
    quantity of each veggie -- just use what you have.

    Roasted Roots and Chokes

    Turnips, sliced
    Beets, sliced
    Baby artichokes, trimmed and left whole
    Onions, sliced
    Oil to coat
    Salt to taste
    Fresh herbs, any kind you like

    Toss together in a roasting pan and roast at 400F for 30-60 minutes,
    turning occasionally. It takes longer if you don't have them in a
    single layer, but we did a huge quantity in a large roasting pan, and
    it came out fine.
