roast lamb recipe

  1. I was looking for roast lamb ideas and came across this:

    It sounds interesting, but I won't be able to grill it.
    I was thinking I would marinate, then roll, tie and roast.

    This would be for Sunday dinner.

    But now that I think of it, I have a more complicated jerk marinade that
    I could use instead.
    It includes orange juice, soy, vinegar, thyme, sage, habaneros and some
    other things I can't recall right now.
    Either way, I think the lamb would be good - no?

    What to serve with it though?

    Allspice and lime juice make this very attractive.

    I normally don't do an actual marinade on lamb-- I instead
    rub it with the spices, then splash some lime juice on it,
    and let it sit about one hour. If it's a tender piece of
    lamb a full immersion-type marinade is probably unnecessary.

    Jerk marinades and lamb don't mix, IMO. I love lamb and I've
    jerked everything (cue Sheldon), but jerked lamb just doesn't
    work.

    This looks like a great recipe. Maybe serve it with lavosh bread,
    hummus, couscous, babaganoush, olive, tomato and feta salad?...

    How about the Potato Onion Gratin that was recently posted.
    The herbs in it go with your marinade and are great with lamb.

    Potato Onion Gratin
    from Gordon Ramsay

    Ingredients

    2 lbs Yukon Gold potatoes, peeled and sliced thin
    4 cups thinly sliced onion
    1 tbsp fresh thyme
    1 tsp fresh rosemary
    3/4 tsp salt
    3/4 tsp pepper
    3 tbsp olive oil, divided plus more for brushing
    3 large cloves garlic, chopped
    1 1/4 cup reduced sodium chicken broth

    Directions
    In skillet, saute garlic in 2 tbsp olive oil. Add onions, sprinkle
    with salt and pepper to taste, and cook until tender, about 8 minutes.
    Add rosemary and thyme and cook for 2 minutes.
    Brush 13x9x2 pan with olive oil. Layer 1/3 of potatoes. Sprinkle with
    1/4 tsp salt and pepper. Add half of onion mixture. Repeat and top
    with last 1/3 of potatoes. Pour broth over the mixture. Drizzle with 1
    tbsp oil. Cover with foil and bake in oven preheated to 425 for 30
    minutes.
    Remove foil and bake until potatoes are tender and start to brown.

    Number of Servings: 8
