I'm hopeful I can get some help choosing the best bike for my needs. I live in a rural area with a mix of gravel and paved roads (and the intersections of the two are often messy). I had planned to purchase a used Specialized Roubaix, though it has been suggested that I consider a cyclocross bike for the wider, more stable tire options (like a Trek XO2). I know there are gearing differences that make a cyclocross less desirable for normal riding conditions, and a road bike still seems the better choice for fitness/endurance riding. But I'm concerned that I may get hurt or frustrated riding narrow tires on loose gravel. And is it feasible to ride a road bike on crushed limestone trails? Anyone have experience with these conditions and want to give me their opinion? I'm not interested in racing, just good biking with good equipment.

I'd go with a cross bike--more versatile.
Here's the one that I built up from a frame:

With the wider fork, I can run fatter tires (>25mm) or road tires or studded winter tires.
Also, if you are mechanically inclined, you can gear a cross bike any way that you desire. The Ridley is geared 53x39 in the front and 11-28 in the rear.
