  1. Ro*Tel Squash

    [Moderator: Ro*tel is the brand name of canned tomatoes with green
    clilies]

    I adapted this recipe from a Ro*Tel chicken
    recipe by replacing the chicken with squash
    and toning down the Ro*Tel product from
    the regular to the milder version.

    2 pounds crookneck squash, cut to your preference
    1 medium onion, sliced thin
    8 oz. egg noodles
    2 cans (milder) Ro*Tel Diced Tomatoes and Green Chilies
    1/3 cup grated Parmesan cheese
    1 cup water
    cooking spray or oil

    Lightly oil or spray with Pam a sufficiently large
    frying pan or heavy sauce pot. (I use a 5 quart
    skillet.) Sweat the onions and squash over
    medium-high heat. Add water, Ro*Tel product
    and noodles and bring to boiling..Reduce heat to
    medium, cover and simmer 12 minutes, stirring
    occasionally. Stir in cheese and serve.

    Makes 4 servings.
