I was wondering if someone might be able to suggest some nice routes for a day or twos cycling around the quantocks and also a reasonable base from which to explore this area. Would probably be looking to cover somewhere between 60-100 miles for each ride (dependent on the terrain and the number of interesting things to see).

On or off-road? If memory serves I have an issue of Mountain Bike Rider around somewhere with an offroad Quantocks route.
I'm guessing from the distance that you're planning on staying on- road, but I could dig it out if you're interested.
I grew up sort of near there, and ISTR recall the town of Kilve being quite a good base for the Quantocks, plus it has an interesting beach.

If you like budget accomodation, the YHA has a hostel there (called 'Quantock Hills'😉 - close to Kilve. It's pretty basic, but very biker friendly being YHA.
Definitely sounds like you're road-riding, so I'm not sure about routes (the mountain biking is fab). I guess with those kinds of distances you might be able to head out towards Glastonbury, Wells, the Mendips (if you like it hilly) or Somerset Levels (if you like it flat) and such like.
