Rice Pilaf Mix
3 cups uncooked long grain white rice
1 cup chopped dried apples
1/2 cup currants
3 tablespoons chicken-flavor instant bouillon
1 1/2 teaspoon curry powder
1/2 teaspoon garlic powder
1/4 teaspoon allspice
In medium bowl,combine all ingredients. Store in airtight container.
To Use: 2/3 cup Rice Pilaf Mix + 1 1/2 cups water
To prepare pilaf, stir dry mix to evenly distribute ingredients. In
medium saucepan, combine mix and water. Bring to a boil. Cover; simmer
over low heat 14 to 18 minutes or until rice is tender and liquid is
absorbed.

Curried Rice Pilaf Mix

1-1/3 cups seedless raisins
1-1/3 cups chopped dried apples
1-1/3 tablespoons instant minced onion
1/4 cup chicken bouillon granules
1 tablespoon plus
1 teaspoon curry powder
Combine all ingredients in large bowl; mix well. Place 2 cups rice mix
in each of 4 air-tight containers or zip-top plastic bags. Makes 4 rice
mixes.
Preparation instructions: Combine 1 rice mix, 1-3/4 cups water, and 1
tablespoon butter or margarine (optional) in 2- to 3-quart saucepan.
Bring to a boil; stir once or twice. Reduce heat; cover and simmer 15
minutes, or until rice is tender and liquid is absorbed. Fluff with
fork. Makes 6 servings.

4 cup uncooked Long-grain White Rice
1 1/3 cup Seedless Golden Raisins
1 cup chopped Dried Apricots
1/4 cup Instant Minced Onion
1/4 cup Chicken Bouillon Granules
1 Tbsp plus 1 tsp Sugar
1 tsp Ground White Pepper
Combine all ingredients in large bowl; mix well. Place 1 3/4 cups rice
mix in each of 4 airtight containers or self-sealing plastic bags.
Makes 4 rice mixes.

Pilaf Mix
Instead of a high fat treat, make this tasty rice mix for those health
conscious folks on your gift list.
75 mL wild rice 1/3 cup
250 mL Western Family long grain 1 cup white rice
3 shallots
3 large garlic cloves
3 mL salt 1/2 tsp
3 mL coarse black pepper 1/2 tsp
10-15 mL chili powder 2-3 tsp
3 mL ground coriander 1/2 tsp
30 mL dried cilantro (coriander leaves) 2 Tbsp
45 mL medium shred unsweetened 3 Tbsp coconut
150 mL golden raisins 2/3 cup
Place each rice in a separate small plastic or cheesecloth bag.
Place all other ingredients, combined, in another small plastic bag.
Tie all 3 bags together into one bag with the following directions
on a small card.
Soak both rices in separate bowls of cold water for 1 hour. Mince
shallot and garlic. Saute both in a little oil for 1 minute. Add wild
rice. Cook another minute. Add 21/2 cups (625 mL) cold water. Bring to a
boil. Reduce heat to simmer; cook, uncovered, 1/2 hour. Add white rice
and the package containing all other ingredients and 11/4 cups (310 mL)
hot water. Stir; bring to a boil. Cover. Reduce heat to simmer and cook
15 to 20 minutes. Serve at once.
Serves 4-6
