    Red Bean Casserole
    "Rice Casserole"

    Southern Belle Buffet Casserole

    2 cup rice
    3 env. chicken noodle soup mix
    9 cup boiling water
    2 lb. bulk pork sausage
    1 bunch celery
    1 lg. green bell pepper
    2 onions
    1 cup whole blanched almonds

    Cover and boil for 30 minutes: 2 cups rice, 3 envelopes of chicken noodle
    soup mix and 9 cups boiling water. Fry 2 pounds of bulk pork sausage.
    Drain off most of the fat. Chop 1 bunch celery, 1 green bell pepper and 2
    onions. Add to sausage and saute. Stir in rice and chicken soup mixture.
    Add 1 cup whole almonds, halved (or slivered). Top with more almonds. Bake
    at 350 degrees for 30 minutes. Makes 16 generous servings.

    Red Bean Casserole

    1 lb. browned hamburger
    Cooked pinto beans
    1 1/2 cup cooked rice
    1 sm. can tomato sauce
    Onion salt to taste
    Tabasco to taste
    2 cup Worcestershire sauce
    1 cup grated cheese

    Mix all ingredients. Cook in greased casserole dish at 350 degrees for
    30-35 minutes. Good to use leftover rice or beans. Hearty!

    "Rice Casserole"

    1 cup long grain rice
    1 (16 oz.) can tomatoes
    1 cup onion
    1/2 cup bell pepper
    1 cup chicken, chopped
    1 cup ham, chopped
    1 cup chicken broth
    1/2 tsp. thyme
    1 Tbsp. margarine

    Simmer the onions and bell pepper in the margarine until tender. Then add
    the chicken, ham, thyme, rice and the tomatoes, diced and the juice. Mix
    all the ingredients and pour in your casserole dish. Pour the chicken
    broth
    over top. Cover and bake 45 minutes to 1 hour at 350 degrees. A great
    supper for all.

    Greenrice Casserole

    2 beaten eggs
    2 cup milk
    3/4 cup instant rice
    1/3 cup chopped onion
    3 Tbsp. margarine
    1 (10 oz.) pkg. frozen broccoli,
    cooked and well drained
    4 oz. shredded American cheese
    1/2 tsp. garlic salt

    Combine eggs, milk, and add uncooked rice, margarine, onion, cooked
    broccoli, cheese, and garlic salt. Pour into baking dish and bake at 325
    degrees 35-40 minutes until firm.
