  1. Rhubarb Pie

    This is a family favourite. We have a rhubarb patch in our
    garden. Hope it helps you. Adrian

    4 cups rhubarb, cut into 1-inch slices 1 2/3 cups sugar
    1/2 cup all-purpose flour dash of salt pastry for 2-crust
    9-inch pie 2 tablespoons of butter

    Combine 4 cups 1-inch slices rhubarb, 1 2/3 cups sugar, 1/2
    cup all-purpose flour, and a dash of salt; let stand 15
    minutes. Meanwhile, prepare pastry for 2-crust 9-inch pie;
    line 9-inch pie plate with pastry. Fill with rhubarb
    mixture. Dot with 2 tablespoons of butter. Adjust top crust,
    cutting slits for escape of steam; seal; flute edges. Bake
    at 400 degrees F for 50 minutes. Cool on wire rack.
