I probably could, but I doubt I'd find a frameset I like as well.

Well, you can easily do that, or you can get smaller chainrings by replacing the cranks with a 110mm
bolt-pattern style, or mountain-bike cranks with eitehr 94 or 104mm bolts, which allow much smaller
rings. You can keep it a double and just leave the granny off. Some Shimano front shifters will work
for triples as well as doubles, so you might be able to do that, too. Cheaper than replacing all the
levers and STI has advantages over downtube or barcon shifting.
