Recently eat out at a fine italian restaurant and ordered a shrimp pasta with a white sauce. The
essence of herbs and garlic was excellent and have never been able to duplicate it. I cook with
garlic, finely chop it and sauti it in butter but can never get in intensity on the finished
product. Any suggestions would be greatly appreciated..

Hey everyone, just wondering if those of you that use a pasta maker to make homemade pasta could
help me out with the following questions:
1) How can I make the dried pasta less brittle? I made a batch of thin cut noodles, hung it on the
wooden drying rack, and it got so dry and brittle it cracked and fell off the rack. Since it's
the winter now, the apartment is very warm and dry (75 degrees). Do you think that's the problem?
Maybe I could drape a damp dish towel over the drying rack?
2) Do any of you dry your pasta in little "nests" or balls? I'd like to do so, but when I tried it
and later boiled it, it stuck together and wouldn't fully break apart when boiled. Maybe dusting
the cut pasta with flour before I make the nest to dry it would help?
