Hi,
I was in a fudge shop several months ago and they had just
made a batch of what they referred to as "european style" or
"bitter" fudge.
It was dark and somewhat bitter, not very sweet at all, but
still nice and creamy. Very enjoyable.
My quest is to learn to make something like this at home. My
three attempts at taking a regular fudge recipe (sugar/karo
light/cream,baker's unsweetened--with less sugar to make it
bitter) then using the candy thermometer and beating after
it cools, etc...have turned out grainy or saucy.
Do you think it's a matter of practice (I've heard fudge is
tough to get right for an inexperienced cook) or is it a
matter of not having a proper recipe (cutting back on sugar
is not the right way to approach the problem)?
Does anyone know of a recipe for this "euro-style"
dark/bitter fudge? I guess that's what I really need.
