  1. Meatloaf has always been hit or miss with me... Mix equal parts lean
    ground beef and ground pork, toss in some diced onions, celery and
    carrots. Add a few eggs, a handful of breadcrumbs, some spices and a
    heavy dose of salt 'n pepper. Well I was reading the archives and came
    across an old meatloaf thread where everyone was trying to guess
    Sheldon's secret trick to keeping the meatloaf moist, but I never
    managed to find the answer. So if you're still out there Sheldon (hey
    it's been a while) would you mind sharing your recipe and this 'secret'
    of yours?

    Im not "Sheldon" but i always add 1/2 to 1 cup of stock or other liquid
    to the meat loaf depending on amount of meat used.

    The first time i did this, following Leah Wolf's recipe in her book
    "Jewish Cookery" (recipe on request) i thought to myself "oops, this
    cant be right" because the meat mix became almost liquid, a very thick
    soupy liquid, but i cooked it up and it came out like a pate, very fine
    grained.

    The liquid, with finely chopped veggies makes a loaf that can be sliced
    thin for sandwiches.
