removing & replacing fork for travel

You should be able to push the fork downwards out of the frame. You may need to tap it gently with a mallet to get it started.

For an integrated headset, do I need to worry about any bearings coming lose in travel? (Or anything else coming off with slight jarring?).

Pull out any loose parts and put in a bag and tape to frame.
In some headsets the bearings will come out and in some they won't.
You could also put a long zip tie through every thing to stop it going anywhere.
