Red Potatoes - i love these!, what is the little green stems or sticks
that are in it and
what do you use to make it oily?
Red Bliss Potatoes
This is from a recipe we use at my banquet hall.
Red Potatoes (Quartered or halved whichever you want)
Melted Whole Butter
Olive or Blended oil
Dry Rosemary
Kosher Salt
Black Pepper
Lawry's Seasoning
Dry Roasted Garlic Seasoning
First after you quarter or half the potatoes, steam or cook them off just
for a bit maybe 10 minutes or so, to get rid of excess starch. When thats
completed get a pan deep enough to mix in. Take some potatoes, about
enough that can cover a sheet pan, and dump them into the pan. Add about 2
oz of oil and 3 oz of butter and mix. Then add about 2 T of salt and 1 T
of black pepper. Mix. Add 2 T of Lawry's, 1 1/2 T Garlic, and 3 T or dry
rosemary. Mix. Dump out on a sheet pan and set aside. Repeat these steps
until all potatoes done and on sheet pans. Then cook at 350 degrees for
about 20 to 25 minutes or until a light brown color. Then done serve em up
with a great slice of beef like a filet or prime rib! :-)
