  1. Red Beans & Rice

    1 . 1 lb package of dry red beans 4 ribs celery chopped 1 large bell pepper chopped 1 large onion
    chopped 4-5 cloves garlic chopped 2 ham hocks or a ham bone salt & pepper to taste few sprigs of
    thyme 1 hot pepper ...whole Olive oil water rice

    First soak beans over night , in a large pot saute all chopped veggies and whole hot pepper and
    seasonings in olive oil , add the ham hocks , or ham bone , add water , and simmer for about 35 to
    40 mins , rinse beans and add to the pot , simmer on low till the beans are tender and the juice is
    thick and rich .

    Rice

    1 cup of long grain white rice 2 cups of water dash of salt

    combine rice water and salt in a pot with a tight fitting lid bring to the boil on high , reduce
    heat to low , cover and cook for 20 minutes . do not remove the lid , after 20 mins remove from heat
    remove lid and let set for 5-10 mins.
