  1. My SIL does this pasta thing that's really easy:

    Maybe 1/2 pound or so of angel hair, cooked and drained.
    1 can (16-20 oz?) artichoke hearts, drained
    16 oz can diced tomatoes with Italian seasoning

    Drain and maybe quarter the artichoke hearts and mix in with the
    tomatoes.

    I love it but have altered it. :-/
    This aftenoon when I made it, I used about 2/3 of a box of bow tie
    pasta, cooked; a 6-oz jar of marinated artichoke hearts, and the can of
    tomatoes.
    I drained the artichokes (reserve the marinade) and scooped the tomatoes
    out of the can with a slotted spoon and mixed them in. Loved it. If it
    seems too dry, add either the reserved marinade from the artichokes
    and/or some of the tomato sauce left in the can. I'd for sure use some
    of the marinade.

    It doesn't get any easier than that and, no, I'm not interested in using
    fresh tomatoes, basil, and garlic -- I really don't think it would be
    the same and I don't think it would necessarily be better.
