    Russian Vegetable Soup

    medium-sized onion 1 medium-sized potato 1 medium-sized parsnip 1 carrots 4oz (112g) butter or
    margarine 2oz (56g) Parsley, chopped 2 tbsp (30ml) Mixed herbs ½tsp (2.5ml) Nutmeg to taste
    Vegetable stock 2pt (1.2l) small leek 1 cabbage 2oz (56g) Salt and pepper to taste.

    Chop the on!on, spud, parsnip and carrots. melt half the butter in a saucepan, saute veggies 'til
    the on!on is transparent. Add parsley, herbs, nutmeg and stock and bring to the boil, simmer for 30
    minutes. cool and blend in liquidised.

    Finely shred the cabbage and leek and saute them in the remaining butter until just tender. Add to
    the blended soup, simmer gently for 10 minutes, adjust seasoning to taste.
