Cake flour 1 teaspoon baking powder
    1/2 teaspoon baking soda
2/2 teaspoon salt 1 3/4 cups sugar 1 cup unsalted
butter -- softe 1 cup cream of coconut -- Such as

    powdered sugar
3/2 cup cream of coconut 1 teaspoon vanilla

Preheat oven to 350°F. Butter and flour two 9-inch-diameter
cake pans with 2-inch-high sides. Whisk flour, baking
powder, baking soda and 1/2 teaspoon salt in medium bowl to

(Coconut Layer Cake can be prepared up to 1 day ahead. Cover
with plastic wrap and refrigerate. Let stand at room
    temperature 2 hours before serving.)

    Thanks!

I made it for a party today and it was a great success. As I
mentioned, I could only find coconut 'milk' so I used two
cans. When I scooped out the settled coconut, I just mixed
enough of the watery milk to render it to a cream like
    consistency. It worked.

Nice recipe, the cake had a pleasant texture and the coconut
    flavour was perfect.
