  1. From "Cookshelf: Fish & Seafood".

    I bought this cookbook very recently and decided to try this recipe yesterday. If the rest of the
    recipes are just as good, I can recommend "Cookshelf: Fish & Seafood".

    Note: I hope that I get the translations correct. However it's in metric, but
    members.aol.comnumbers.html will convert it to the units you prefer.

    1 tbsp vegetable oil 1 small onion, copped 2 cloves of garlic, chopped 2,5 cm ginger, peeled and
    chopped roughly 2 big tomatoes, peeled and chopped roughly 1,5 dl fish stock 1 tbsp medium curry
    paste 1 tsp ground coriander 400 g cooked and drained chickpeas 750 g cod fillet, cut into big
    pieces 4 tbsp fresh cilantro, chopped 4 tbsp thick yoghurt Salt and pepper

    Heat up the oil in a large saucepan and add onion, garlic and ginger. Fry on low heat while
    stirring, for 4 - 5 min. until everything is soft. Take the saucepan off the heat. Put the onion-mix
    in a blender or food processor together with the tomatoes and the fish stock. Mix until it's smooth.
    Pour this back to the saucepan and add curry paste, coriander and chickpeas. Stir well and let it
    simmer for 15 min. until it thickens. Add the fish bits and simmer for 5 min. till the fish is
    cooked. Take the saucepan off the heat and let it stand for 2- 3 min. Add the fresh cilantro and the
    yoghurt. Add salt and pepper to taste. Serve with rice.
