  1. Makes 2 servings

    24 raw string beans, cut into 1/4 inch pieces
    5.5 oz raw cauliflower (see NOTE)
    1/4 c minced red onion
    2 tbs olive oil
    1/4 tsp garlic powder
    dash salt
    dash pepper
    1 tsp dried tarragon (crushed leaf type, not powder ground)
    2 oz very very sharp cheese (i used horseradish infused cheddar)

    NOTE: The cauliflower should be just the very very tips of the flowerets
    trimmed off, so that the pieces are very small, somewhat larger than rice.

    In a frying pan over medium heat, heat the olive oil and throw in the onion.
    Saute the onion until it's just starting to turn brown, then add the
    cauliflower. Saute the mixture until everything is beginning to turn a nice
    golden brown, including the cauliflour. Add spices and saute another 2
    minutes. Add green beans, and cook until green beans are slightly wrinkly on
    the outside, but still slightly crisp to the bite. Stir frequently. While
    green beans are cooking, chop/shred/grate cheese. Spoon succotash onto
    plates and spinkle w/ 1 oz of cheese per serving.
