Here's a recipe I stumbled across while doing a google search for something
else. I haven't tried it, but looks interesting. The original called for
1 cup milk instead of cream and water. You could probably substitute an LC
thickener for the flour too.
PEANUT BUTTER SOUP -- 6 servings -- 9g net carbs per serving
1 stalk celery, chopped
1/2 of one onion, chopped
2 T. butter
1 1/2 T. flour
4 c. chicken broth
1 c. peanut butter at room temperature
1/4 c. heavy cream
3/4 c. water
Sauté celery, onion and butter until vegetables are tender. Blend in flour
and add broth.
Cook over medium heat until thick, stirring occasionally.
Remove from heat and strain through a sieve.
Return soup to sauce pan; whisk in peanut butter, cream and water. Heat
well, but do not boil. Serve topped with chopped chives, if desired.
