REC: LC Pea Soup

  1. I did a glazed ham instead of turkey for my thanksgiving dinner this year
    and I always make split pea soup when I have leftover ham. Since split
    peas are very high carb, I had to come up with something that was LC but
    retained the flavour and texture of the original. Using a combination of
    frozen peas and green soybeans (edamame), and doubling the quantities did
    the trick. It's very filling and my lunch guests couldn't tell the
    difference.
    The original recipe calls for 2 cups of split peas and works out to 26g net
    carbs/serving.

    Pea Soup

    Amount Measure Ingredient -- Preparation Method

    2 cups frozen peas
    2 cups frozen green soybeans (edamame)
    4 cups chicken broth
    2 cups water
    6 ounces cooked ham -- large slices
    1 medium onion -- chopped
    1 medium carrot -- chopped
    1 medium celery stalk -- chopped
    1 bay leaf
    1/2 teaspoon salt
    1/2 teaspoon savory
    pinch pepper

    In dutch oven or stock pot, combine all ingredients. Bring to boil; reduce
    heat, cover and simmer for 1 1/2 hours. Remove bay leaf and ham; reserve
    ham. Using stick blender, puree soup in pot. Finely chop ham and return
    to soup. Serve with LC rolls.

    Cool, Bev-Ann. I don't think I've ever seen pea soup on asdl-c, but it's
    carb count really isn't bad at all. I'll want to try this... my family
    really loves split pea soup. I used to also make a Dutch version that has a
    relatively thin split pea and ham broth with cubes of potatoes added in
    later, a little lighter than regular split pea. After I try your recipe I
    might try modifying it to my Dutch recipe, using cubed turnip instead of the
    potatoes. Might be good, might be even better than the original. I'm craving
    hot soups now that the weather has gotten cold here.

  3. I think you'll like the one I converted. You could probably make the carb
    count even lower by using less peas and more soybeans but I'm not sure what
    that would do to the flavour.
    For your Dutch version, try rutabaga instead of turnips. They're slightly
    higher in carbs but have a much milder flavour and would be closer to the
    potatoes you're replacing. Let us know how it turns out and post the
    recipe. :-)

  4. Sounds like you're doing a different kind of pea soup, but I was
    recentlytrying to imitate Campbell's green pea, which is almost like a
    cream soup. I blended canned asparagus, juice from the can, coconut milk,
    and seasoned with lemon and salt. Came out wonderful!

  5. That sounds really good too. I love asparagus.
    The one I converted is a traditional French Canadian split pea soup. The
    original uses dried split peas as the base, which are way too high in
    carbs. I also made it simpler by using chicken broth instead of making
    broth from a ham bone. But those are the only adjustments I made.
