  1. LORRAINE'S BEER BATTER

    1 Cup soy flour
    1/2 Tsp. baking powder
    1 Tbsp guar gum
    Salt, pepper, garlic powder (wing it)

    1 egg
    3/4 pint of low carb beer

    Method:

    Combine dry ingredients.

    Beat egg and beer together with electric mixer. Slowly add the flour
    mixture, reserving 1/4 cup in a shallow plate. Beat until batter looks quite
    thick, you can always add more beer if needed.
    ..
    Dip fish in seasoned flour to completely cover fillet before dipping it
    into the batter, this helps the batter stick to the fish.

    Heat oil to medium - enough to cause a drop of water to spatter.

    Deep fry until golden brown.

    This can be prepared ahead of time by slightly deep frying the fish and
    placing them on a rack. When ready to eat, just refry for a couple of
    minutes.

    We had batter left over and I did half a dozen hot dog wieners - pretty good
    too.........

    The only thing I would change is to add a packet of splenda to the
    dry mix.
