I was given this recipe years ago by the wonderful mother of an old
boyfriend. She was an absolutely AMAZING cook. Every holiday, she
made every person invited to her table his/her own special dish, so
that each person would have at least one thing that they liked!
Edith's Mushroom Chicken
1 can cream of mushroom soup
1 cup evaporated milk
1 1/2 c. flour
2 t. paprika
1/2 c. sour cream
1 1/2 c. grated cheddar
1 t. salt
1/2 t. pepper
4 chicken breasts (not boneless, skinless)
1/4 c. butter
1/4 c. chopped onion
Mix flour, S & P, and paprika. Dip chicken in water, then roll in
flour. Place in baking dish & dot with butter. Bake at 425 degrees
for 30 mins. Remove from oven.
Mix remaining ingredients & pour over chicken. Cover with foil & bake
1 hour at 350 degrees.
Alternate method: Put all ingredients in slow cooker & cook several
hours.
