While browsing through my local produce section, I came across organic "Gold Beets" -- tops and all. They sure do look pretty. But, what in the world (would a real beginner) do you do with them?

I'd go to rec.food.preserving and ask for a recipe as to how to can them...then I'd offer to send a few to Melba's Jammin' aka Barb Schaller, she would I'm sure offer you something in trade :-)
