I have a basic adjustable dumbbell set, in which the lightest plate is
2.5 lbs. Since I'm a bit of a weakling still, I do need to adjust the
weight by increments less than 5 lbs - so, would it it do any harm if I
were to put on only one 2.5 lb plate on one side of a dumbbell? Or is
it not good to have it unbalanced this way? Or does it build extra
wrist strength? Or should I shell out the major $$$$ for fractional
    plates?

I'll be very grateful for any advice.

Yes, do it, don't worry about it. Hold the bar off-center so the DB is
balanced in your hand. There's plenty of room for that.

I always felt that this was an advantage for some exercises--e.g. an
overhead press you can keep them away from your face a little more and have
more room for your forearm as the DB comes down.
