They're only cheap ones... which is probably why the thread in the
plate went, not on the bolt... but I've only done about 500 miles and

You could tap them out a size bigger and use the next size up screw. You
might have to drill the clearance hole in the cleat a bit bigger too. Not
sure what thread they normally are - possibly M5, in which case M6 would
only be a mm bigger overall. You might even get away without having to drill
the whole any bigger.

Or as a real bodge which might conceivably work - bash the edges of the
stripped hole to spread the metal a bit - putting the shoe on an
(improvised) shoe-last or similar, then try again, attempting to re-tap the
orginal size or not according to taste.

Next size up is more likely to have a happy outcome I suspect.
