Clootie Dumplings
4 oz shredded suet or margarine
8 oz flour
4 oz oatmeal
3 oz sugar
1 rounded teaspoon baking powder
8 oz mixed sultanas and currants
1 teaspoon ground cinnamon
1 teaspoon ginger
1 tablespoon golden syrup
2 eggs
3-4 tablespoons buttermilk or sour milk
Rub fat into sifted flour, then add all the other dry ingredients.Make a
hole in the centre and add the syrup and beaten eggs andstir well. Add
enough buttermilk or sour milk to make a soft butfirm batter. If using a
pudding cloth dip it first into boilingwater then flour it well before
adding the pudding mixture. Tieup, but allow a good space for expansion.
Put a saucer or plate in bottom of pan. Boil for 2 1/2 to 3 hours. Can be
put into agreased pudding basin instead of cloth.
Serve warm with custard sauce.
