  1. A couple more thoughts, this is not the first study to show diabetes risk
    and red meat consumption. There was another done showing that red meat,
    but not other sources of animal protein, was associated with greater
    diabetes risk. My guess is that there is something in the lipids of red
    meats that are different which contribute to greater insulin resistence in
    addition to saturated fat levels per sey.

    I wonder if the diabetes risk / red meat link is in any way tied to the high
    arachidonic acid levels in red meat (and egg yolks)? I know that AA exacerbates
    high blood pressure and/or cholesterol, edema, and inflammatory conditions such
    as skin rashes, asthma, allergies, bursitis, and arthritis. Could it also
    contriubte to insulin resistance?

    The Eades say to marinate beef overnight in wine and olive oil, and always grill
    the beef; this reduces the AA content by as much as 35%.
