This is the first posting I have ever done, so here goes!
With your finger, seperate the skin from the meat and make a little
pocket. Place a pat of butter or margerine, either flavored with
poultry seasoning or not, depending if you like that seasoning, and
place the butter in the pocket over each side of the breast. Then place
the whole breast side down on the pan, the boney cavity should be
facing up. Sprinkle all with salt and pepper and poultry seasoning and
add 1/2 cup of coffee, yes plain coffee to the bottom of the pan. With
that add 1/4 cup of water. Cover all with foil and cook at 350 degrees
for 20 minutes per pound. Ex: 3 pounds would be 1 hour.
Now you can add veggies like fresh pealed carrots, onions, and garlic
to the broth if you want, It's all up to you, just remember cooking is
suppose to be fun! The broth from the turkey breast makes a fine
gravey,Mix flour and water equally until smooth and slowly add to
boiling broth and cook for at least 1 minute to remove the floury
flavor. Gravey will thicken as you boil it, so add the flour mixture
slowely, a little at a time. You could also make soup out of the broth
but that is a whole new recipe. Hope I was helpful!
