I have been wondering about honey though. Is it considered to be a good
    carb or a bad carb?

The whole idea that natural foods are better than processed foods,
as if the concept worked without exception. Hemlock wasn't
exactly good for Socrates except that it cured his verbosity.

Honey's a natural food and therefore good for you, right? Well, I
suppose it is if you get it the way a caveman got it. Climb a
tree. Grab the hive. Get stung a dozen times. Do a 200 meter
sprint to the nearest stream. Swim in the stream for 20 minutes
while madly holding the rest of the comb up. Get out of the
water. Enjoy, wow, so little noney it fits in your mouth. Maybe
even be able to do the same thing again in only 4 months.

But on the scale it's available in a store, forget it. The stuff is
purified sugar. Not any realistic difference from powdered white
    sugar.

So if you have a bunch of honey and you want to do the best
low carb thing with it - brew it into a few gallons of very dry
mead. It'll take a year even two, but your neighbors will love you
when you share it with them.
