    Hmmmmmm... Let's see.
    Stuff I would not have eaten:

    Oatbran
    V8 (not really LC)
    Strawberries
    Apple
    Rice

    Fruit is out until this weight is gone. ;-)

    Dinner at work last night was a can of tuna mixed with mayo, scooped and
    eaten with celery sticks. Supper the night before for my housemate and
    I was a pot roasted pork shoulder with garlic stabs, done with
    portabello and regular button mushrooms, celery, onions, a few small
    carrots, Yams (for him, not me!) and that was it. I ate only 2 carrots,
    plenty of the pork and lots of the celery, onions and mushrooms.

    You might want to consider keeping a food log and adding up those carb
    grams, then calculating the percentage.

    Others might not be as strict as I am, but I've found I have to be!

    No sugar, no starch. Period...

    What about blueberries and raspberries? Those are pretty darn
    low-carb, relatively speaking. An ounce of blueberries has less carbs
    than an ounce of carrots, from what I recall.

    Strawberries, too, a whole cup has only 8 net carbs and you don't need a
    whole cup, two or three med/large berries are a nice treat. And good for
    you, too, full of antioxidants I believe.

    I don't eat a lot of carrots...
    That is why I only ate one.
    That's the first carrot I've had for the past 2 months.

    For veggies, I mostly eat celery, pickles/cucumbers, summer squash,
    limited string beans, lettuce, spinach, chard, mushrooms, limited
    numbers of olives, avocado on rare occasions, bok choy and cabbage.

    I avoid fruit as fructose can really affect IR and I have enough of a
    problem with it as it is!
