The best is bomba, from Spain. Hard to find and expensive. Lacking that, any rice for risotto such as arborio or carnaroli shuold work fine.
Whole Foods carries rice for paella, I can't remember the name but "bomba" sounds about right. (At least the one on Columbus Circle carries it). Sue(tm) Lead me not into temptation... I can find it myself!
