I'd concur with the Specialized Sirrus. I've been really pleased with mine which is the "Elite" version (carbon forks). Spec. is Tiagra rather than 105 but otherwise pretty much as you are after. It's fast and comfortable (I even like the BG sadlle which I know isn't universally popular). I haven't ridden it much on towpath type stuff but the Armadillo tyres fitted should do well.

I'd second the recommendation, even though mine is the "Sport" which I believe is just the same apart from not having carbon forks. Had mine for 3 weeks now and it is still making me smile. Initially thought I might change the sofa saddle but now I'm used to it I don't think I'll bother. Did a 37 mile ride on Saturday of which about half was towpaths (some pretty rough) and nothing broke. The slickish tyres were a bit slidey on wet mud as you might expect. Two punctures in the first week but none since so not yet sure whether the tyres are a bit flimsy for city life or I was just unlucky.
