I was always under the impression that a Reuben was made with corned
beef, not pastrami, but the meny from the State Deli in Manhattan (not
necessarily the best, but certainly a very popular spot) lists the
following on their menu..."YOUR CHOICE OF CORNED BEEF, PASTRAMI,
TURKEY OR SALAMIWITH HOT SAUERKRAUT AND MELTED SWISS CHEESE". Maybe
it's geographical.

I have only seen corned beef myself. I like them but the last one I
had was drowning in 1000-island, and it was tough enough that I had to
use a knife and fork. Wonder if it was cut the wrong way as far as
the grain. I have to admit, even that one was pretty good.
