without sweeteners? Would it have a ice cream like texture?

You might want to try plain yogurt instead of heavy cream. I use my own
homemade yogurt which is very thick and [censored], but I add splenda for
    sweetener.

If you want something completely natural use xylitol instead. It is a
polyol or sugar alcahol that provides the sweetness in berries.
Usually Atkins count these as zero net carbs though I wouldn't say
that was quite correct. It can be ordered on the internet.

  3. Xylitol has about half the calories per gram of regular carbs so
theoretically it would be wise to count it at a 50% rate.
