Carbs aren't a problem persey if one doesn't over consume, as with any
macro category, to exceed one's energy needs per day. It is best to
choose foods made from whole carb sources,ie. beans, whole grain products,
tubers with the skin on, etc. as these sources have all the important and
vital nutrients which the more refined products lack. Muffins can be made
with non-transfats, especially if you make them yourself so the fat form
is known. The important part is not to gain weight by over consumption of
calories and among choices to eat a wide variety from all the macro
sources.
