If you can - bring your own salad dressing. That will save having to worry about high carb dressings if you order a salad.
If you know where you're staying and what kind of restaraunts are available nearby - do some research. See if they have websites, low carb options, nutrition information etc. It pays to plan ahead.
Pick up a few atkins bars if you can to have on hand for emergencies.

If you have control over your hotel reservations (as opposed to a corporate arrangement, for instance), try to find a place that has a kitchenette. I stayed at a hotel last April and brought all my own food. The fire alarm drill nearly pierced my eardrums, though, so I recommend bring foam earplugs just in case (I'm NOT kidding about that).
