Those colors are within the usual range of colors. Do you ask because yyou are growing it and want to know when it is ready? If so it is ready when the blooming is finished.

As long as the root is plump and has not started to shrivle. It is better to get small roots as yyou use it more quickly/frequently before it starts to shrivle. When cut the aroma has a fresh smell that starts to diminish with age.
