I'm a fan of Furi, but only a recent one, I admit. A friend of mine
who cooks professionally was much taken with my big Furi santoku. He
hasn't yet seen the little one I just bought. Also Bob Pastorio, who
knows a thing or two about matters culinary likes Furi quite a lot.
If there's a Sur la Table within striking distance of you, pay them a
visit. The one in Dallas has a wide range of Globals and three sizes
of Furi santokus. I was able to hold them in my chopping hand for a
while and determine which felt good to me. These things can be pretty
personal at base.
