I've never bothered much with panoramas but obviously there is scope for

The Auto settings will be fine /most/ of the time. Your shots at the
summits of hills were all 50/50 land and sky and the auto setting has
problems with this configuration (You're not alone). Given a fine day
and some lovely views I'm sure you're going to be very pleased. The
Hole in the wall shot looks as if the camera has focussed on the
fore/middle ground not the rocks and being a dull day was using a wide
aperture giving poor depth of field.
