I love the skin and eat it all the time. I would caution you about one
thing though. I believe I read that chemicals can be found plentiful in the
skin, so I suggest you buy good chicken, such as Bell and Evans. Try and
buy free range birds as well, not ones from a tiny cage.

Quoted message said:I looked up some information about chicken skin and was quite
surprised. I remember being told to take skin off chicken because "it
is high in saturated fat and cholesterol".While it is questionable that saturated fat and cholesterol are bad
for us, chicken skin does not have much of either. I found this out
when I looked up some information for another individual in another
newsgroup. If you are per chance afraid of "saturated fat", it helps knowing 72%
of fat in chicken skin is unsaturated. (see
http://tinyurl.com/42a9y). In salmon, for example, 76% of fat is
unsaturated, a similar quantity (http://tinyurl.com/55arb).If you are per chance afraid of eating cholesterol, then chicken skin
has a minuscule amount of cholesterol. For example, skin from a whole
chicken contains only 90.9 mg of cholesterol, or less than 1/3 of an
egg yolk. (same source)Chicken skin is calorie dense, but satiating.
It contains vitamin D, a good vitamin preventing bone loss and helping
achieve proper calcium balancce. (http://tinyurl.com/3or7t)So, those who suffer from bone loss, may benefit from chicken skin.
