I think one you can pick up at the hardware store like the Nesco or
American Harvester will do you fine. My dad has the American Harvester
and it works fine for him with one batch of apples a year and one or two
batches of beef jerky.

They have a smaller model now but it's more than what you can pick up in
the store. What I like about the Excalibur is the fan which drys things
evenly (no rotating necessary) a thermostat so different temps for
different things, and newer models now have a timer so you can set it
and leave. Easy to clean and works for making yogurt, raising bread and
such as well.
It really depends on how much you think you might use it.
BTW - commercial banana chips are usually fried rather than dried.
That's why they're so crispy.
