I think that's [censored]. Protein converts to carbs at something like 48%, over
quite a lot of time - so the insulin need to cover beef is half that of
sugar, over a much longer timescale.

Again from a diabetic POV, that isn't what happens. Too much insulin is as
bad (from a diet viewpoint) as too little. What is good about Atkins is that
the carbs are mostly low and slower acting, mixed in with lots of fibre;
that allows your pancreas to put out its lots of little spurts of insulin
with a much better chance of matching the glucose availability, so it's all
locked up in muscles instead of turned into fat. Then the weight loss
reduces your insulin resistance - so the movement of glucose into muscles is
easier - and it becomes a virtuous circle.
