and Ullrich did the same in '97.
If you count mulitple jersey types from different years: Jalabert won king
of mountains (two times) and points. Hinault also won the king of
mountains. Lemond won white and yellow in different years.

victories are boring and useful to GC, so let's not count LeMond's

Merckx won the last stage four times! Hinault also won the last stage
twice, in his '79 and '82 wins. I didn't check the years prior to when I
was born (1969) for other riders who may have done the same.
Other interesting history (to me at least)... Merckx was mortal. Merckx
was being dominated by Luis Ocana in '71, losing 8:42 in one stage, but he
and Ocana crashed in a wet turn on a descent. Merckx got up, but Ocana got
run over by Zoetemelk (it was foggy and slick) and had to quit.
