  1. Not quoting text entirely, but, Curly Sue mentioned that using a
    microplane to zest, would obviously shorten the drying time. Monsur
    Fromage suggested looking up 'zest' by googling. Ok, did both.

    Found something that I consider significant on allrecipes.com, and,
    they sort of suggest the fact that if you zest in little tiny pieces,
    ala microplane (ok, they mentioned grater), that a lot of the moisture,
    but, also, the essential oils of flavor and smell are lost, they
    dissipate because of the small pieces. So it seems to make sense to
    zest any citrus in as long a piece as you are capable of making, then
    letting it dry, to achieve maximum effect for taste and smell. I
    mentioned food processor as what was suggested for powdering these
    things, but, the more I think of it, think it was probably a coffee
    grinder he mentioned. Also, he mentioned that he was working on this
    concept (original episode late year 2004) with a spice company. Must
    watch this again on Wed. for the exact everything again. But, Monsur's
    reminder of a pepper/lemon thing, makes my mouth water.

    But, what if you want to make something, not just for a dish that
    you're serving today, but, also, to squirrel up something for the
    future. From what allrecipes.com has to say, and, this is
    extrapolation, but, for a one time thing, hey, OK; but, for future
    use, and, to get maximum taste, smell, texture (they called doing
    citrus on a shredder (ok, microplane and shredder are not the same
    thing, but--) wasteful, sloppy, messy, and, the impliction was,
    stupid); so, I can't believe that I'm real wrong if deciding that,
    for the best use of so-called various citric powder stuff, I
    thought this chef that appeared on Sara's show, had thought it all
    through, and, this idea that he mentioned on the show, was the way
    that he and his award-winning restaurant, had decided to follow
    through with the concept. On the other hand, YMMV.

    Grind lots of pepper. Zest many lemons...dry the zest then mix with
    pepper...I use limes as well. I put the zest on a metal tray on top of
    the toaster oven directly after use to dry from residual heat. Voila!
    excessive amounts to use in future projects!.

    Now I remember there was a thread on candied ginger using a crocpot a
    yr or 2 ago that might be adaptable for candy-ing citrus peel.

    Seems like too much trouble. Why not just put small pieces of dried
    lemon peel in your pepper grinder along with the peppercorns?
